Marshmallows
Ingredients:
-3 envelopes Gelatin
-1 Cup Cold Water
-1.5 Cups Sugar
-1 Cup Corn Syrup
-1/4tsp Salt
-2 Tblespn Vanilla
Directions:
1.
In the mixer, combine gelatin, and ½ cup
cold water. Allow to stand while you prepare the sugar syrup.

In a medium saucepan, combine sugar,
corn syrup, salt, and 1/3 cup water. Cook over medium heat until sugar
dissolved stirring frequently. Raise heat to high, and cook until the sugar
syrup reaches 240 degrees on a candy thermometer.

Remove sugar syrup from heat. With the
mixer on low and with a whisk, slowly pour sugar syrup into gelatin mixture.
Turn mixer on high and whip until very think (about 15 minutes). Add vanilla
and mix for 30 seconds.
4.
Line the bottom of a baking dish with
plastic wrap. Spray with non stick booking spray and dust with confectioners’
sugar. Pour Marshmallow mixture into pan. Smooth and dust with confectioners’
sugar.
Come back tomorrow morning starting at 7:30 am
for hot coco with your marshmallows J
